PREP TIME: 15 Minutes
COOK TIME: 8 Minutes
Ingredients

16 oz. Tri Color Rotini (or other interesting pasta of your choice)
2 small-medium Carrots, peeled and sliced
1 pint Grape Tomatoes, halved
3.8 oz. Black Olives
2 oz. Pepperoni, slices or chunks
Approximately 1 Cup Italian Dressing (use more or less, according to your tast)
Handful of Shredded Parmesan Cheese (optional)

Directions
Step 1  Step 1:
Cook pasta according to package directions; drain and rinse in cold water.
 
Step 2  Step 2:
In a large bowl, combine the pasta, carrots, tomatoes, olives, pepperoni. Add salad dressing and toss to coat.
 
Step 3  Step 3:
Cover and refrigerate until serving.
 
Step 4  Kids in the Kitchen::
This is really a GREAT recipe for kids to help with. They get to wash, chop, and mix beautifully colored vegetables and pasta. They may even want to "sneak" some carrots! When the dish is done, chances are, they'll be more likely to want to eat it.
